I would have never thought about making a burger out of amaranth! Especially keeping the amaranth raw without having to soak it or cook it beforehand. Crazy, you just mix it in a bowl with the other ingredients and cook in a pan. Impressive how simple and yummy it is and just like with any burger, you can add the toppings of choice. The best part is that it is a healthy vegan option. I mean, if you want to add a fried egg on it for a breakfast or dinner meal, well that is up to you. I found this delicious vegan and gluten free bread that went really well with the burger. I usually like to make open faced sandwiches, you can see the way it turned out in the photo below.
I had a hankering for mushrooms, avocado and of course the addition of Savvy & Well seasonings made the burger even more delicious. Each time I make these amaranth burgers I try a different seasoning from the 9 flavors so I can test out which one tastes the best. One can never go wrong with Mojo Cítrico and Everything Seasoning so we tried the first batch with these. The steps are as follows:
Gather the handful of ingredients. If you don’t have our seasonings you can use plain salt and pepper.
Cook the onion and garlic until gold brown. Add the ingredients to a bowl, mix and form into burger patties.
Cook the burgers in a pan over medium high heat.
Let them get golden brown and delicious before flipping.
Done. Let’s eat!
Guest recipe by: Danilo Rottigni y Jhovaneé Monge from Puerto Vallarta, Mexico
1 tsp Coconut Oil
1/2 Onion, chopped small
2 cloves Garlic, chopped small
1 cup Amaranth, raw
1/4 cup Soy Sauce (or GF liquid aminos)
1 tsp S&W Mojo Cítrico
1 generous pinch S&W Everything Seasoning
Sautéed Mushrooms, Avocado, Fried Egg
- Place a sauté pan over medium high heat, when hot add a little bit of coconut oil. When hot, add the onion, garlic and cook until it is golden brown.
- In a bowl, add the amaranth, soy sauce, seasonings, cooked onion and garlic. Mix well with a spoon and then form 2 burger patties with clean hands. Make sure that you press it together so that it stays compact. If it won’t stay, add a tiny bit of soy sauce but only if it is really necessary.
- Add the same sauté pan you used for the onion and garlic mix over medium high heat with a touch of coconut oil. Add the burger patties and cook until golden brown on both sides. In the meantime, heat up your bread and optional garnishes if desired. Serve the burgers and enjoy!
