Chia Pudding Recipes

The latest obsession in my family is chia pudding. Adding a couple of ingredients to the mix while it soaks, helps add lots of flavor. Then you can add any toppings you want and breakfast or a quick dessert is ready to enjoy. Perfect when everyone has different tastes and cravings.

Chia Pudding Base Recipe

Serves 2

3 tbsps Chia Seeds

1 cup Milk of Choice- Almond, coconut, cacao, cow

1 tsp Choco Chai Seasoning

1 tsp Vanilla Extract

1 tbsp Honey, Maple Syrup or other sweetener of choice

  1. Whisk together all ingredients in a bowl and refrigerate overnight for best results.

Here is my almond milk recipe, it is so easy and tastes so much better than anything you can find in the store!

Almond Milk

1 cup Almonds

3-4 cups Water

  1. Soak the whole raw almonds overnight or for at least 4 hours.
  2. Blend with 3-4 cups water (less water for creamier milk)
  3. Strain using cheesecloth or a nut bag (find on amazon) *Add honey or vanilla at this point if desired.
  4. Save the ground almond in the freezer, when you have accumulated a few cups, defrost, add to a sheet pan, dry on the lowest setting in the oven for about 2 hours. Blend and you have almond flour for baking!

Choco Chai Mango Pecan Chia Pudding 

1 handful of Pecans, rough chop

3 slices Dried Mango, sliced

2 tbsps Mango Jam

  1. Alternate between layers of chia and toppings

Peanut Butter Choco Chai Chia Pudding

2 tbsps Peanut Butter

2 tbsps Bittersweet Chocolate Chips

sprinkle extra Choco Chai Seasoning

1/2 Banana, sliced (optional)

  1. Alternate between layers of chia and toppings

Coconut Golden Milk Chai Chia Pudding with Papaya and Granola

3 tbsps Mango Jam

1/2 cup Papaya

2 tbsps Granola

  1. Follow the same base recipe using coconut milk and adding a tsp of Turmeric
  2. Alternate between layers of chia and toppings

Coconut Milk Recipe

1 Fresh Young Coconut

  1. Blend the milk of 1 coconut with the coconut pulp until smooth. Squeeze through nut bag. Use the excess coconut meal in a smoothie if desired.

Be creative with your toppings and milks. The options are endless!
