Centro Mayasol‘s Delicious Vegan Red Pozole with Mushrooms

This is my Aunt Sol’s Vegan Pozole recipe. She opened one of the first vegetarian restaurants in Puerto Vallarta back in the day and she now runs a beautiful detox center called Centro Mayasol in the mountains of Sayulita, Mexico. She also gives vegan and vegetarian cooking classes and has shared this recipe with us today. It is really simple and delicious.

Vegan Pozole 

6 portions

3 tbsps Olive Oil

1/2 onion, chopped

4 Garlic cloves, shopped

1 Carrot, chopped

1 Red Bell Pepper, chopped

1 lb Mushrooms, sliced thin

1 tbsp Al Pastor Seasoning

1 tbsp Mojo Citrico Seasoning

1 tbsp Mil Usos (everything) Seasoning

1 tbsp Sea Salt

1 Liter Water

1 lb Hominy 

Garnishes: sliced cabbage, red onion, cucumbers and lime

  1. Sauté the onion and garlic in olive oil over medium heat until golden brown, about 5 minutes. Add the red bell pepper, carrot and mushrooms, seasonings and cook 5 minutes. Add the water and hominy, cover and cook for 30 minutes at a simmer. Serve with garnishes of choice and enjoy.
