The following recipes are my favorite recipes for red rice and beans. These are great additions to a meal like the Whole Huachinango (Red Snapper) a la Joe Jack’s, a Pork Loin if you want something Cuban inspired or accompaniments for a grill out on a summer day. 

Mom’s Red Rice

Makes 2 cups

1 tbsp Olive oil

1 cup Rice

3 Tomatoes

½ Onion

2 Garlic Cloves

Water as needed

1 tbsp S&W Everything Seasoning (mil usos)

Instructions:

  1. Place a medium pot over medium-high heat. Add the oil to the pot. While it is heating up, rinse the rice, add to the pot and toast for a few minutes until fragrant. Quickly blend the tomatoes, onion, garlic, mil usos to make 1 ½ cups of liquid. Add water if necessary and add to the pot. Mix, let come to a boil and cover. Set an alarm for 15 minutes, turn off the heat and let stand for another 10 minutes before uncovering for perfect fluffy rice.

Coconut Black Beans

Makes 2 cups

1 tbsp Olive Oil

1/2 Onion, diced

2 Garlic Cloves, chopped

15oz can Black Beans, rinsed

1 tbsp Brown Sugar

1 tsp Cumin, ground

1/2 can Coconut Milk

1 pinch S&W Everything Seasoning (mil usos)

Instructions:

In a small pot over medium heat, add the olive oil, onion, garlic and sauté 1 minute. Add the black beans, coconut milk, brown sugar and cumin. Bring to a simmer and cook until the liquid is slightly reduced – 10 minutes. Season with a pinch of S&W Everything Seasoning.
